Bircher Muesli with Berries

This breaky is perfect on a summer’s morning. It’s so delicious and fresh… it’ll put anyone (including morning grumpy bums) in a good mood. The summer berries make it extra special… (Lurve summer berries) and the brazil nuts and sunflower seeds are extra good for you. They help fight pollution and Brazil nuts especially helps with protecting our skin from sun damage.

Serves 2

Ingredients:

  • 4 tbsp skinny milk
  • 30 grams rolled oats
  • 2 tsp oat meal
  • 100 grams of vanilla yogurt
  • 2 tsp honey
  • 2 green apples
  • 200 grams of berries (strawberries, blueberries, rasberries, blackberries) or other summer fruits if you like
  • 2 tbsp sunflower seeds
  • 3tbsp of chopped brazil nuts

Method:

  1. Pour cold milk over the rolled oats and oatmeal and leave in the fridge to soak for 15mins.
  2. Remove from oats from fridge after soaking time is up and stir in the yogurt and honey.
  3. Grate the apple into the mixture and stir in 1/2 of the berries and 1/2 of the nuts and seeds.
  4. Serve into bowls and top with a dollop of yogurt and the rest of the berries.
  5. Sprinkle the remaining sunflower seeds and brazil nuts over the top and serve.
